We grow our asparagus in the fertile Sacramento River Delta, which lies between the San Francisco bay to the west and Lodi, to the east. Its rich peat soils make it one of the best locations in the world to grow asparagus. In fact, asparagus has been growing in this region (the same region we grow many of our delicious pears and cherries) since the late 1870s.
We harvest our asparagus for about 60-90 days between mid-February and mid-May.
The harvest is very labor intensive. Individual spears are harvested by hand when they are approximately 9 inches long and show compact tight heads and good green color.
We harvest sizes from small (3/16”) spears to Jumbo (14/16”) spears.
The fat spears are just as tender as the thin spears. The tenderness relates to the color – the greener the better!
